| Carbondale Colorado - nestled in the heart of the Roaring Fork Valley , Carbondale was founded in the early 1880's by settlers whose primary activities were mining coal and farming potatoes; Carbondale still celebrates Potato Day in October, with festivities including a parade and a farmer's market to recognize its heritage. Today, in addition to being home to about 5,000 residents, it has become a town filled with interesting people, great art galleries, the Carbondale Clay Center, wonderful restaurants (including what some restaurant critics feel may be the best restaurant in Colorado) and quaint shops. In July of each year, the Carbondale Council on Arts and Humanities sponsors Mountain Fair, a celebration of visual art of all kinds, music, food and activities for children - and for children at heart. Carbondale is only a short drive through the beautiful Crystal River Valley from historic Redstone, home of the incomparable Redstone Castle and numerous shops, and Marble, best known for the marble mine that produced nearly flawless marble for the Lincoln Memorial and the Tomb of the Unknowns in Arlington. Or drive for half an hour and find yourself in Aspen, with world-class skiing and world-class shopping, restaurants that will dazzle your palate and great people-watching places. Twenty minutes in the opposite direction takes you to Glenwood Springs, home of the hot-springs pool and the Glenwood Caverns, among numerous other attractions.
