Spring Denver Museum Walk
... Check in as early as 10 a.m. at the Queen Anne Bed and Breakfast Inn in downtown Denver and get an early start in the sunshine and fresh air for your Spring Museum Walk. Within 5-8 blocks from the Inn are the State Capitol, the Molly Brown House, Colorado History Museum, Denver Art Museum, Denver History Museum and Kirkland Art Museum. Leave your car at the Inn and take along our $100 gift certificate to assist in paying for the museum entry tickets and lunch, perhaps at Mad greens or Palettes Restaurants in the Denver Art Museum. Hot Air Balloons in the San Juan Mountains
Enjoy three spectacular days of hot air balloon activities in the wonderful San Juan Mountains. Guests of the Spangler House B&B may attend all of the Ridgway Hot Air Balloon and Classic Car Festival's events while staying just ten miles away in a historic B&B in downtown Ouray, Colorado. Ouray is a 132 year old, historically preserved, mining town in the heart of the San Juan Mountains. Early rising guests at the Spangler House, wishing to see the 7:00 AM balloon launch, will not go hungry. A special take-away breakfast will be prepared each morning during the festival. April is Blossom Month in the North Fork Valley
... Noted for its many orchards, the North Fork Valley celebrates the renewal of spring each April with the abundant blossoms that herald the growing season. The show begins with apricot blossoms and progresses through cherries, peaches, plums, pears, and apples. You are invited to enjoy the show and stay at one of the regions premier bed and breakfasts. Midweek guests (Sunday - Thursday) will enjoy a 25% discount on a second night's stay. Innkeepers will be happy to provide directions for a self-guided tour. Linda at the Bross Hotel will be able to give you a blossom update throughout the month.

The third weekend of the month, April 18-20, the Paonia B&B Association will host its fifth annual Blossom Walk. Guests will arrive Friday Evening and settle into one of the bed and breakfasts for a weekend of exercise, fresh air, local hospitality and more. Saturday morning, following a gourmet breakfast, the group will do a 5K walk to a local orchard, where you can inhale the aroma of the blossoms and marvel at their beauty as well as meet with the orchardman to gain insight into raising succulent fruit. The afternoon will be free for participants to pursue activities of their choosing -- wine tasting, art studio visitations cycling, hiking, antique hunting scenic drives, etc. Dinner will be at one of Paonia's renowned restaurants.

Cost: The full weekend for two persons sharing a room is $375 (including tax), $270 (including tax) for single occupancy. This includes two nights at a bed and breakfast, walk, lunch, and dinner. Dates: Deadline for reservations is April 14.  

The Dove Inn-Golden, Colorado 

Di's Potato Pie

This recipe is from my stepmother, who is a fabulous cook. The original recipe had meat in it, but I think it's lovely without it.

Serves 4

Preheat oven to 350.

5 eggs
1/2 c. milk
3 c. Ore Ida Southern Style Hash Browns, thawed
1 bunch green onions, sliced
1/2 t. salt
1/4 t. hot sauce (or more to taste)
1 c. shredded sharp cheddar

Beat together eggs and milk in a medium bowl; stir in potatoes, green onions, salt and hot sauce. Stir in the cheese.

Pour into a greased 9-inch pie plate or quiche dish. Bake 45 minutes or until center is set.
